Stuffed Poblanos

These stuffed peppers are a feast for your eyes and a satisfying treat for your tummy. Clean, green, and not too spicy, these are a quick and easy answer to an empty party platter or the perfect at-home snack.

INGREDIENTS | SERVES 12

6 poblano peppers

1 onion, minced

1 yellow pepper, minced

1 red pepper, minced

1 jalapeño pepper, minced (remove seeds before mincing if desired)

1 cup cooked brown rice

1 teaspoon garlic powder

1 cup crumbled goat cheese

Cut poblanos in half lengthwise. Set all peppers on a foil-lined baking sheet prepared with olive oil spray.

Combine minced onion, yellow pepper, red pepper, jalapeño pepper, and cooked rice. Blend ingredients well, and season with garlic powder.

Spoon the mixture evenly into the poblano halves, and top with goat cheese crumbles.

Bake at 400°F for 20–25 minutes or until cheese is bubbly and peppers are cooked through.
