DANDELION PESTO

The leaves of dandelion (Taraxacum spp.) are packed with nutrients, in particular vitamins A, C, E and K, along with calcium, iron, potassium and magnesium. It is also an excellent bitter, and as a leafy green makes a great substitute for basil in pesto. Though there’s no reason why you cannot include some basil too. Enjoy this dip with crudités as a pre-dinner snack. Make this on the day of eating.

2 cups fresh dandelion leaves

2 cups basil leaves

½ cup cashew nuts

½ cup sunflower seeds

½ cup water

½ cup olive oil

3 cloves garlic

3 tablespoons lemon juice

1 teaspoon salt
