Directions:

1. Combine sugar, water vinegar, fish and soy sauce, ginger and garlic and whisk for 1 minute or until sugar is dissolved completely. Set the sugar mixture aside.

2. Heat the oil in a wok on the medium high heat. Add chicken to the oil and stir.

3. Pour 2 ½ ounces of the sugar mixture over the chicken in the wok and stir so the meat is fully coated. Cook for 7 minutes or until liquid becomes syrupy

4. Add the rest of the marinade in the bowl to the wok, stir and cook for another 5 minutes or until chicken is not pink inside

5. Add jalapenos, peanuts and onion and stir well. Cook for another 3 minutes.

6. Top with cilantro before serving
