CHILE-LIME MANGO SLAW

This dish is a twist on popular street food in Los Angeles and Mexico. Lime juice and a kick of chile powder liven up the sweet, crisp mango. If jicama is unfamiliar, get ready for a treat. This mild, crunchy root is great as a snack or in salads.

Recipe Tip If you’re feeling lazy, skip the skewers and add the lime juice and chili powder straight onto mango that has been pitted and scored.

1 mango, peeled and cut into bite-size pieces

1 cup sliced jicama

1 cup sliced bell pepper

Juice of 1 lime

1 tablespoon chili powder

1. In a small bowl, combine mango, bell pepper, and jicama.

2. Squeeze the lime juice over the vegetables. Sprinkle with the chili powder.

3. Refrigerate for 15 minutes to allow flavors to blend and enjoy.

Serves 1. Prep time: 5 minutes. Cooling time: 15 minutes
