Beef Pho

SERVES 6 / PREP TIME: 5 MINUTES / COOK TIME: 20 MINUTES

This soup is our simple AIP take on traditional Vietnamese pho. It is hot, comforting, and full of incredible flavor. We love using shirataki noodles in this recipe, which are made from glucomannan, a type of fiber from the root of the konjac plant. Swap them for zucchini noodles, if you prefer. For an extra punch of flavor, we like to garnish our soup with fresh chopped cilantro and chopped scallions.

10 cups Beef Bone Broth (store-bought or homemade, here)

1 (7-ounce) package shirataki noodles

1 (6-inch) piece fresh ginger, peeled and cut in half lengthwise

1 cinnamon stick

4 garlic cloves, peeled

¼ cup fish sauce

2 teaspoons raw honey

1 teaspoon pink Himalayan salt or sea salt

1 pound flank steak, finely sliced against the grain

¼ cup whole Thai basil leaves, or regular basil, torn into pieces

1 lime, cut into 6 wedges

1.In a large pot, combine the bone broth, shirataki noodles, ginger, cinnamon, garlic, fish sauce, honey, and salt. Bring the broth to a boil, then cover and reduce the heat to low. Simmer for at least 20 minutes.

2.Use a slotted spoon to remove the ginger pieces, cinnamon stick, and clove garlics from the soup, and skim off any other particles that float to the top.

3.Divide the steak, shirataki noodles, basil, cilantro, and scallions among 6 bowls and pour the hot broth into each one. The steak will cook in the broth. Serve with lime wedges.

4.Store any leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
