INGREDIENTS

1 cup chopped kale

1 medium zucchini, spiralized

1 14-ounce can of white beans, rinsed

2 medium carrots, chopped

1/2 cup of barley

1/2 tsp of salt

8 cups of water

1 teaspoon dried oregano

1 tbsp of cumin

2 medium skinless, boneless chicken breast

INSTRUCTIONS

1. Heat water in a stock pot until its boiling, add in the chicken breast, oregano, cumin and 1/2 tsp of salt. Cook, covered about 15 minutes or until cooked through.

2. Remove chicken from pot and strain the liquid, reserving to use as base for soup.

3. Pour barley into the liquid and then bring to a boil. Cook with the lid on for about 20 minutes.

4. Meanwhile, shred the chicken with two forks. Set aside.

5. Add the white beans and carrots and cook for additional 10 to 15 minutes, until the carrots are a bit soft. Add in the shredded chicken, kale and zucchini. Simmer for additional 5 minutes and serve.
