Anything wrapped in lettuce is irresistible – it’s the cool/warm, crunchy/soft contrast that does it for us. You can serve this as a stir-fry over rice or noodles, with a side dish of Asian greens. Otherwise, wrap spoonfuls in lettuce and serve as a first course or lighter dinner. Non-pork eaters can substitute chicken or quail for the pork – unfortunately, there’s no easy substitute for the lap cheong.

Make ahead: You can approach this in two ways as a make-ahead dish. For the best results, you could make the sauce and prep all the separate elements up to 1 day ahead, then cook everything immediately before serving. But for convenience – and if it’s a midweek dinner and you’re just after something easy and yummy – you can make the mixture in advance, just leaving out the spring onions (scallions) and coriander (cilantro), which can be added when you reheat the pork. We often freeze this, too. The addition of fresh green spring onions and coriander gives the defrosted dish the lift it needs at the end.
