PAVLOVA, the national dessert of both Australia and New Zealand, is a lovely, light presentation composed of a meringue base, Chantilly cream, and fresh fruits. Here the meringue is baked in individual-sized portions, the Chantilly cream is enhanced with vanilla bean seeds, the fruits are a gorgeous combination of bright green kiwi and dark blueberries, and the whole thing is finished off with a simple strawberry coulis.

Another beautiful thing about this dessert is that all the components can be prepared in advance. Assemble just before serving to keep the meringue cups crisp.
