256. Buttery Codfish with Scallions

(Ready in about 10 minutes)

Per serving: 237 Calories; 5.4g Fat; 3.4g Carbs; 41.3g Protein; 1.5g Sugars; 0.5g Fiber

Ingredients

1/2 lemon, sliced

1/2 cup water

2 fillets smoked codfish

2 teaspoons butter

2 tablespoons scallions, chopped

Sea salt and ground black pepper, to taste

Directions

Place the lemon and water in the bottom of the Instant Pot. Place the steamer rack on top.

Place the cod fish fillets on the steamer rack. Add the butter, scallions, salt, and black pepper.

Secure the lid. Choose the “Steam” mode and cook for 3 minutes at Low pressure. Once cooking is complete, use a quick pressure release; carefully remove the lid.

Serve warm and enjoy!
