BAKED “FRIED CHICKEN” STYLE TOFU
Serves 4-6
2 (14-ounce) packages frm tofu, drained
¼ cup corn starch
1 cup original flavor hummus
2 cups corn or wheat fakes cereal, crushed
I’m really amazed at just how well hummus lets you cut out other ingredients. Making meals with hummus requires less salt and less extra fats; in a recipe like this tofu one, for instance, I would normally use a lot more ingredients to make it taste great, but it works just like this. What an uncomplicated and enjoyable dish to prepare. Hummus really does have everything we need in terms of consistency and flavor; it works so great for so many different uses!
Preheat oven to 400°F. Grease a large baking sheet. Slice each block of tofu in 4 rectangles by slicing once sideways then another time in half down the top center, making 8 rectangular pieces in total. Pat them dry as much as possible using paper towels or a clean kitchen towel. Carefully dip each tofu rectangle in cornstarch, then spread with hummus and pat with cereal flakes. Place tofu pieces on greased baking sheet. Bake for 20 minutes or until outside of tofu is golden and crispy, turning halfway through.
Tip: This tofu can be eaten as is, along with a side dish, with your favorite dipping sauces, or as patties for sandwiches. The finished product can also be cut into cubes and used in salads as well. Don’t be afraid to get creative with it!
