USEFUL KITCHEN TOOLS
There are a few kitchen tools we use just about every day because they make healthy eating so easy. We tend to eat a lot of rice, potatoes, oatmeal, beans, lentils, and so on, in a variety of combinations. Here are some of the gadgets and tools we like.
PRESSURE COOKER
Pressure cooking is the process of cooking food using water (or another cooking liquid) in a sealed pot known as a pressure cooker. Pressure cookers trap steam while the food is cooking, which increases the temperature so that food cooks faster. The higher temperature also forces liquid into the food and keeps it moist and tender. The higher the pressure, the faster things cook, and the shorter the cooking time.
It used to be that a pressure cooker required a certain amount of attention and work. You would put it on the stove, warm it up, add foods, add liquids, cover it, bring it up to pressure, then turn the heat down, monitor it, remove it at the right moment, and so forth. It wasn’t that hard but it was a little involved and required paying close attention so the food came out right. Today, that’s all changed. Electric pressure cookers came along, and basically you put the water and food in, put on the lid, press a button, and walk away. The cooker does the rest, and a short time later, you have perfect food every time.
An electric pressure cooker that we recommend is called the Instant Pot. As Rip noticed, we actually have three of these out at all times on our kitchen counter: we may have rice or potatoes in one, legumes or soup in another, steamed veggies in the third. The stove rarely gets a workout because it’s so quick and easy to just dump something in a pot, press a button, and go about your business knowing that you’ll have a healthy meal ready for you in just a few minutes. Having one pressure cooker is great, but more is better. They can cook things quickly, and they’re so easy to operate. Everyone in our family can use it. Just measure out the rice (or potatoes or oatmeal or beans or whatever you want to cook), pour in a specified amount of water, put the lid on and lock it, press a button, and that’s it. Walk away, the pot does the rest, including bringing it to pressure, and when it’s done, bringing pressure down and keeping the food warm. In the morning we might put rice in one cooker and beans in the other, press a button, and in anywhere from ten to twenty-five minutes (depending on what kind of rice) the rice will be ready. The beans may take up to eighty minutes but with no one having to pay attention. We then have a nice supply of delicious food for the rest of the day, or maybe for a few days depending on how much we make.
