Bacon

If you’ve never microwaved bacon, it might scare you. I was scared, thinking it was going to light my microwave aflame. Plus, it sounds possibly gross. But it’s not. It’s actually a really satisfactory way to make crispy bacon and extremely convenient when you have the stove already covered in skillets of eggs, potatoes, tortillas, and beans. Here’s how to do it (without buying one of those microwave bacon cooking plates, which I can’t recommend because I’ve never tried one. But if you have, let me know how you like it):

On a microwave safe plate (duh), put down 2 layers of paper towels.

Then lay out your bacon. You can probably only fit 4 or 5 pieces at a time.

Cover them with another layer of paper towels. Yes, it’s a HUGE waste of paper towels and you know how I feel about that, but it has saved my ass more than once.

Microwave on high for 1 to 2 minutes, depending on how much bacon you’re cooking, then check it. You might have to change the paper towels now if they are completely grease-soaked to keep them from sticking to the bacon. Keep going, checking every 30 seconds to a minute until it’s done to your liking. Voila.

To cook bacon on the stove, start the bacon in a cold skillet, turn it to medium-high heat and cook, turning a few times, for 10 to 15 minutes. Drain on a paper towel or a brown bag or some newspaper like we did in the old country.
