Wash the potatoes and let them dry.
Poke 3 to 5 holes in each potato with a small knife. Wrap each potato in two layers of aluminum foil.
Preheat the grill. If you are using charcoal or wood, wait until the fire has burned for about 15 minutes and the charcoal or wood is partially covered with a thin layer of ash.
Put each potato in the coal and ashes. Turn the potatoes halfway through cooking.
In the meantime, mix the remaining ingredients in a bowl.
Bake for 15-25 minutes depending on the size of the potatoes. Medium-sized potatoes are usually cooked in about 15 minutes. When you press down on the potato with the tongs, you should feel like the potato has softened. You can also use a skewer to prick the potato to see if it's done.
To serve, cut the potatoes together with the aluminum foil in halves and garnish with the cold quark mixture.
