Ultimate Meatloaf
A tasty, wholesome meatloaf is the perfect midweek meal for all the family.
Servings: 6
Cooking Time: 1hour 15mins
Ingredients:
Butter (to grease)
Meatloaf:
3 slices white bread (torn into 2” pieces)
⅔ cup skim milk
1 egg (beaten lightly)
½ cup shredded carrot
1 yellow onion (peeled, diced)
1 tsp salt
¼ tsp black pepper
1½ pounds ground beef
Glaze:
¼ cup tomato ketchup
¼ cup brown sugar
1 tbsp American mustard
Directions:
1. First, preheat the main oven to 350 degrees F. Grease a 9x5” loaf tin with butter.
2. Add the bread to a blender and pulse to crumbs. Transfer the breadcrumbs to a large bowl along with the milk, egg, carrot, onion, salt, and black pepper. Stir to combine.
3. Add the ground beef and mix using clean hands. Transfer the mixture to the prepared loaf tin.
4. Prepare the glaze, add the ketchup, brown sugar, and mustard to a bowl and stir to combine. Then, spread the glaze on top of your meatloaf.
5. Place in the oven and bake for 1-1¼ hours until it registers an internal temperature of 160 degrees F. Take out of your oven and allow to stand for 10 minutes before slicing and serving.
For easy freezing: Bake the meatloaf as instructed but do not prepare and add the glaze. Allow the baked meatloaf to cool completely before wrapping tightly in kitchen foil and freezing.
To cook from frozen : The night before you wish to serve the meatloaf, transfer it from the freezer to the refrigerator. The following day, prepare the glaze and spread it on top of the partially thawed meatloaf. Arrange the meatloaf in a greased baking pan and cook in the oven at 350 degrees F until it registers an internal temperature of 165 degrees F.
