Preheat your pellet grill to 350°F (177°C).
Slice the andouille sausages in half lengthwise, and place the sausages on the grill. Grill for 10 to 12 minutes, flipping halfway through, until they reach an internal temperature of 140°F (60°C). Remove the sausages from the grill.
Assemble the sandwiches by piling brisket slices on each bottom bun and then topping the brisket with two sausage halves and a mound of pulled pork. Cover it all with the Carolina BBQ sauce. Next, pile on some coleslaw, pickle chips (if using) and the top bun. Serve with pickle spears, if desired.
