Asian Chicken and Snow Pea Salad

It’s a fast dinner recipe! You’ll see!

Ingredients:

5 ounces snow peas cut in halves

1 big cucumber thinly sliced

1 barbequed chicken skinless, boneless and shredded

1 red onion thinly sliced

1 cup coriander shredded

4 ounces Asian salad greens

¼ cup olive oil

¼ cup lime juice

2 tablespoons sugar

Salt and pepper to the taste

Method:

Put snow peas in a pot, add water, bring to a boil and cook for 1 minutes.

Drain, pat dry, put in a bowl and leave aside for now.

In a bowl, mix lime juice with olive oil and sugar and stir very well.

In a salad bowl, mix chicken meat with snow peas, onion, coriander, cucumber and salad greens.

Add salad dressing, toss to coat and serve right away.
