Winter Pork Soup

(Ready in about 20 minutes| Servings 3)

Per serving: 225 Calories; 13.1g Fat; 6g Carbs; 1.1g Fiber; 18g Protein

Ingredients

1 ½ cup pulled pork, cooked and shredded

4 cups vegetable broth

2 garlic cloves, diced

1 yellow onion, diced

½ teaspoon paprika

½ teaspoon cumin

¼ teaspoon salt

¼ teaspoon pepper

½ cup celery, diced

1 large carrot diced

2 tablespoons vegetable oil

1 cup baby spinach

2 tablespoons fresh cilantro, chopped

Directions

Heat the vegetable oil in a large pot. Saute the garlic for 1 minute and then add the onion. Cook for 2-3 minutes.

Stir in the vegetable broth, carrot, celery, baby spinach and pulled pork.Season with salt, pepper, cumin and paprika.

Boil for 15 minutes. Serve hot and sprinkle with fresh cilantro.
