Warming Winter Soup

Ingredients

1 large onion, finely chopped

100 g (4 ozs) French beans

12 Brussels sprouts, chopped

Curly kale, chopped

6 medium mushrooms, sliced

1 litre (2 pints) vegetable stock

3 carrots, sliced

2 teaspoons mugi miso

1 parsnip, diced

2 tablespoons oil

1 small swede, diced

1 teaspoon mixed herbs

3 teaspoons shoyu

Method

1. Heat the oil in a large pan, then sauté the chopped onion for five minutes.

2. Add the remaining vegetables and continue to sauté for a further 5 - 7 minutes.

3. Add the vegetable stock, cover and bring to the boil. Reduce the heat and simmer gently for 35 minutes.

4. Remove the pan from the heat, then take a cup of the liquid and set aside to cool for 5 minutes.

5. Add the miso to the cooled liquid and dissolve it.

6. Add to the soup, mix well and serve.
