Sugared Apricot Scones

White whole-wheat flour is a sweet, light whole-wheat flour that is available from King Arthur Flour or Hodgson Mills and I like it for its boost of nutrition along with its lighter taste. If you don’t have it on hand, just use regular whole-wheat flour for these delightful apricot-kissed, rustic, sweet scones.

1 cup white whole-wheat flour

2 – 2 1/2 cups all-purpose flour

1 tablespoon orange zest, finely minced

1 tablespoon baking powder

1 teaspoon baking soda

3/4 cup sugar

3/8 teaspoon salt

1/2 cup unsalted butter, in one- inch chunks

1 egg

1 1/2 teaspoons pure vanilla extract

1 cup whipping cream mixed with 1 tablespoon lemon juice

½ cup finely diced dried apricots, plumped and dried
