HOW TO PUREE
Pureeing food hardly needs any description, but there are some tips that can make it more successful. First, get the right equipment. Food processors are perfect for making baby food—and also for making breadcrumbs, grinding nuts, and making pesto. There are mini food processors that are easy to clean and store. Several mothers have told me they relied on their blender, which can work well, though I find small amounts of food tend to get stuck under the blade. Another mom told me she received a handheld immersion blender as a gift and loved it. A portable hand-operated food mill can be useful both at home and when traveling, and can be found in stores selling baby and child items.
In general, puree food that is cold or at least allow it to cool to a temperature safe enough to work with. Put the food in first and grind it until it is reduced to chunks or lumps, then add a small amount of liquid. Use cooking liquid, breast milk, formula, Baby Broth (recipe on Chapter 5), or pure unsweetened juice as the added liquid; avoid cow’s milk until age one and yogurt until about nine months. How much liquid you add will depend on the food and how smooth you want the puree to be. Well-cooked carrots, well-cooked beets, avocado, and cooked spinach puree easily, as do fruits such as plums, peaches, fresh apricots, and pears. Purchase a small spatula, which can be very useful to scrape down the sides of blenders and food processors.
