37. Chicken with Herb Parmesan Spaghetti Squash

Prep Time: 15 minutes/ Cook Time: 20 minutes/ Serves: 4

Ingredients :

➢ 1 lb. chicken breast, skinless & boneless, cut into small pieces

➢ 3 lb. spaghetti squash

➢ 2 teaspoons of olive oil

➢ 3 tablespoons shallots, minced

➢ 1 tablespoon of melted coconut oil

➢ ½ teaspoon rosemary, dried

➢ ½ teaspoon oregano, dried

➢ ½ teaspoon thyme, dried

➢ 3 cloves of garlic, minced

➢ ¼ teaspoon of ground pepper

➢ ¼ teaspoon of kosher salt

➢ 2 tablespoons parsley, minced

➢ 1/3 cup vegan Parmesan, grated

➢ ½ cup of chicken broth

➢ Pepper and salt to taste

Instructions :

Pierce your spaghetti squash with a knife in many places.
