Cheesy Meatball Casserole

NUT-FREE, SOY-FREE

Serves 8 | PREP TIME: 5 minutes | COOK TIME: 25 minutes

With plenty of meaty and cheesy goodness, this casserole is the kind of food that should come to mind when you think “low-carb diet.” Not only is it rich and delicious, it’s also easy—sometimes it’s nice to have a recipe that’s really more about assembly than about cooking. You simply throw all the ingredients into a baking dish, put it in the oven, and wait for a delicious dinner.

1 (32-ounce) jar marinara sauce

1 (32-ounce) package frozen Italian meatballs

8 ounces shredded mozzarella cheese

1 packed cup coarsely chopped fresh basil

¼ cup grated Parmesan cheese

1 . Preheat the oven to 400°F.

2 . Spread about 1 cup of the marinara sauce into an 8-by-10-inch baking dish.

3 . Put the meatballs in the baking dish, and scatter the mozzarella cheese and basil on top.

4 . Cover with the remaining marinara sauce.

5 . Cover the baking dish tightly with foil, transfer to the oven, and bake for 20 minutes.

6 . Remove and discard the foil, and top with the Parmesan.

7 . Return the baking dish to the oven, and bake for 5 minutes, or until the cheese is melted and beginning to brown.

INGREDIENT TIP: Look for meatballs without a lot of added fillers, such as bread crumbs or rice. Fontanini Mamma Ranne offers a beef and pork meatball with only 2 grams of carbohydrates per serving.
