2 red chillies, seeded and finely chopped

2 spring onions, finely chopped

grated zest and juice of 2 limes

500 g tuna, cut into 3 steaks

2 coriander sprigs, leaves picked

2 Thai basil sprigs, leaves picked (or use regular basil)

1 tablespoon coriander seeds

ΒΌ teaspoon ground black pepper, plus extra for seasoning

to serve

2 tablespoons fish sauce

2 teaspoons blended sesame oil

vegetable oil, for frying

1. Dry-roast the coriander seeds in a frying pan over medium heat, then coarsely crush them using a mortar and pestle.

2. Combine all of the ingredients except the tuna and herbs in a bowl and mix well to make a dressing. Set aside.

3. Heat a non-stick frying pan over high heat and add a little vegetable oil.

4. Season the tuna with salt and black pepper. Sear the tuna for 40 seconds on each of the 4 sides, turning the tuna chunks with a pair of kitchen tongs.

5. Remove the tuna from the pan and set on a chopping board. Use a coarse-toothed, serrated bread knife to slice the tuna into thin slices, then arrange them on a large platter.

6. Spoon the dressing over and scatter the coriander and basil leaves over the top to finish.
