½ cup dried apricots

¼ cup hot water

2 tablespoons fresh lime juice

½ cup mayonnaise

1 canned chipotle chile pepper in adobo sauce, chopped

2 tablespoons finely chopped green onion

1 tablespoon adobo sauce from can

1. Combine the dried apricots, hot water, and lime juice in a bowl. Let stand 15 minutes; drain. Pat apricots dry, and coarsely chop.

2. Combine the mayonnaise and next 3 ingredients; reserve 2 tablespoons of the mixture for the Pecan-Crusted Pork Burgers. Stir the apricots into remaining mayonnaise mixture. Cover and chill until ready to serve. Makes about 1 cup
