Instructions:

Peel and cut each potato in half.

Cut each half into three wedges and set aside.

Preheat the oven at 400F.

Combine the ghee, garlic, ginger, and the mustard seeds in a large bowl.

Add the garam masala, ground cumin, and chili powder.

Add the black pepper and salt. Mix everything well.

Add the potato wedges and coat well with the mixture.

Place the potato wedges into a large nonstick baking dish.

Bake in the oven for 15 minutes or until browned and tender.
