20 fajita-sized flour tortillas

1-1 ½ cups Roma tomatoes, diced

1-1 ½ cup shredded iceberg or Romaine lettuce

Hot sauce, if desired

Directions

Preheat the oven to 350°F.

Heat olive oil over medium heat and add onions. Sauté until tender and fragrant, about 2 minutes. Add beef, chili powder, cumin, paprika, salt, black pepper, and red pepper.

Cook for 10 minutes and then add ½ cup hot water to the skillet and lower the heat.

Simmer the meat for 15 more minutes. Add cheese and continue cooking until cheese is melted.

Meanwhile, wrap the tortillas in foil and warm in the oven for 10-15 minutes.

Prepare the tacos by first placing a spoonful of meat in the center of each tortilla and then topping it with tomatoes, lettuce, and a splash of hot sauce, if desired.
