17 – Cilantro-Lime Marinated Steak

This marinated steak works wonderfully in fajitas, as a main dish or appetizer. It Makes good sandwiches, too. Reserve some marinade for a delectable sauce.

Makes 9 Servings

Cooking + Prep Time: 25 minutes + 8 hours of marinating time

Ingredients: • 6 garlic cloves

• 1/2 chopped onion, red

• 2 fresh limes, juice only

• 1 jalapeno pepper, medium

• 2 tbsp. of thyme leaves, fresh

• 1 cup of cilantro leaves, packed loosely

• 3/4 cup of oil, corn

• 2 tbsp. of honey, pure

• 3 lbs. of flank steak, beef

• Salt, kosher, as desired

Instructions:

1. Puree honey, corn oil, cilantro, thyme, jalapeno, lime juice, onion and garlic into your food processor. Blend till incorporated well.

2. Marinate steak in 1/2 cup of puree in zipper lock plastic bag in refrigerator overnight. Reserve remainder of puree to use at a later date for sauce.

3. Preheat your grill for med-high.

4. As grill warms, remove meat from fridge. Allow to set out at room temp. for 1/2 hour or longer. Discard excess marinade.

5. Season steak liberally with salt. Cook till done as you desire.

6. For serving, slice steak against grain in 1/4-1/8” slices. Drizzle the rest of the marinade over meat. Serve.
