This is a perfect make-ahead soup I learned about while visiting the Yucatan Peninsula. It is a stunningly beautiful, vibrantly colored refresher to savor when the sun is hot and the air is humid. Avocados lend a satisfying potassium and fiber-rich backbone, while the tomatillos and broth bring a nice light consistency. In Mexico, this soup is made with milder, more floral limes that are difficult to find in the United States. When shopping here, the second choice would be Key limes, the third choice regular market limes. This version was written using market limes, but if you find the others, use them and increase the amount of juice you use. Organic crema is hard to come by, so you may want to make your own by thinning down organic sour cream with a bit of water.
