Recipe 18: Chicken Salad

INGREDIENTS

1/3 cup diced celery (4 T.)

1/8 cup minced onion (2 T.)

2 T. Dill Pickle Relish

1 T. oil

Salt and Pepper

Healthy Mayo of choice (¼ cup)

2 cups cooked cold chicken

Mix all ingredients together well. Best after refrigerated for at least one hour. Will keep in refrigerator for 5 days.

Recipe 19: Chicken Vegetable Soup

This is a wonderfully flavored soup you can make in under one hour.

If you have never made your own chicken soup I hope you will give this a try and see how much better it is than canned chicken soup, and also, that you don’t need noodles in chicken soup for it to be a hearty, healing and comforting food.
