Tuna with Thyme and a Mediterranean Topping

The flavour combination of these ingredients reminds me of relaxed holidays in the hot sunshine and long, lazy lunches in the shade of some canopied restaurant. When you first tear open your parcel, you will appreciate just what I mean! Serve them with crusty bread and a crisp green salad.

Serves 2

1 tbsp olive oil

1 tbsp lemon juice

1 garlic clove, crushed

2 tbsp fresh thyme leaves

salt and freshly ground black pepper

2 tuna steaks, each weighing about 175g/6 oz

1 small red onion, thinly sliced into rings

10 cherry tomatoes

6 green olives, sliced into rings

1. Put the oil, lemon juice, garlic, thyme and seasoning into a shallow non-metallic dish, large enough to hold the tuna in a single layer. Add the tuna and turn to coat it well. Cover and leave to stand for about 30 minutes or up to 2 hours, turning it occasionally.

2. Lay each tuna steak on a piece of baking paper or foil, large enough to enclose it completely. Scrape the juices from the dish and drizzle them over the top. Separate the onion slices into rings and arrange them on the tuna. Add the tomatoes and olives. Close the parcel, leaving plenty of space around the contents and sealing the edges well.

3. Arrange in the steamer and cover with the lid. Steam for about 12 minutes until the tuna is just cooked.
