Pita Bread Bean Salad

Ingredients:

1 Tbsp. balsamic vinegar

2 Tbsp. olive oil

2 cubed pita breads

2 cubed tomatoes

1 sliced red onion

1 can red beans

Directions:

Take out a salad bowl and combine together the vinegar, oil, pita bread, red onion, and beans together.

When these are combined, season with the pepper and salt and then serve.

Provencal Summer Salad

Ingredients:

2 Tbsp. balsamic vinegar

2 minced garlic cloves

1 tsp. mint, dried

2 sliced tomatoes

2 sliced red onions

1 sliced eggplant

1 sliced zucchini

Directions:

Season the tomatoes, onions, eggplant, and zucchini with the pepper and salt. Place these onto your grill and let them cook for a few minutes.

Move the vegetables over to the salad bowl before adding in the vinegar, garlic, and mint. Serve this salad right away.
