coconut apricot macaroons

This is a classic gluten-free recipe but you can replace the apricots with any dried fruit you like: cherries, pineapples, mangoes, you name it – they all work beautifully. I recommend you use very good quality dark chocolate for the best results.

3 egg whites

175 g / 21⁄2 cups sweetened shredded dried coconut

5 tablespoons agave nectar

50 g / 1⁄4 cup chopped dried apricots

25 g / 1 oz. good-quality dark/bittersweet chocolate, melted

a baking sheet, lined with parchment paper

Preheat the oven to 150ºC (300ºF) Gas 2.

Put the egg whites in a spotlessly clean metal or glass bowl and whisk until light and frothy.

Add the coconut, agave nectar and apricots and stir just to combine. Form teaspoon-size cookies using your hands to shape into mounds, and place on the prepared baking sheet.

Bake in the preheated oven for 12–14 minutes, until golden around the edges and on the top. Let cool on the baking sheet.

When the macaroons are completely cool, drizzle over the melted chocolate and let set before serving. The macaroons will keep for up to 4 days if stored in an airtight container.
