CHOCOLATE BROWNIE PROTEIN BALLS

MAKES 8

PREP TIME 10 minutes

COOK TIME 2 minutes

3 tablespoons peanut butter (or other nut butter)

2 tablespoons coconut oil

2 tablespoons honey

3 tablespoons almond meal

2 tablespoons protein powder

2 tablespoons raw cacao powder, plus extra for dusting (optional)

Heat the nut butter, coconut oil and honey in a small saucepan over medium–low heat until melted and combined, then stir through 2 tablespoons water.

Mix the almond meal, protein powder and cacao together in a medium bowl, and stir through the wet ingredients.

With clean damp hands, roll into eight balls and lightly dust with cacao powder, if coating. Refrigerate until set, and then store in an airtight container for up to 5 days.
