Remove and set it aside to cool.
Place two chicken halves in two plastic resealable bags of a gallon each.
Divide the brine into two parts and pour one part each in each of the bags. Seal and refrigerate the bags for about 8 hours.
After 8 hours, remove the chickens from the bags and pat them dry.
Sprinkle and massage the meat with the paprika-ancho spice rub.
Light a starter chimney with charcoal fire. Put the coals that are lit to the grill. Start indirect grilling.
Rearrange the coals to the sides of the grill in order to create a big space at the center.
