Gado gado is a traditional Indonesian dish consisting of a vegetable salad topped with peanut sauce dressing. In this recipe, thick pork chops and sliced onions slowly simmer in a sweet, citrusy gado gado–style peanut sauce. If you’d like a little fire in your sauce add a couple of teaspoons of Asian sweet chili sauce.
