Garbanzo Bean Salad

Garbanzo beans (high in fiber) and avocado (healthy fat) mash up beautifully with herbs, giving you a great alternative to mayo in your summertime salads.

⅓ cup garbanzo beans, drained and rinsed

¼ cup diced avocado

1 teaspoon freshly squeezed lemon juice

1 tablespoon chopped fresh parsley

½ teaspoon chopped fresh chives

3 hard-boiled large egg whites, chopped

2 cups mixed salad greens

½ slice Ezekiel bread, toasted

Coarsely mash the beans with the avocado, lemon juice, parsley, and chives. Fold in the egg whites.

Pile the bean mixture on top of the greens. Dip the bread into the mash and/or spread some on the bread.

Nutrition information: 280 calories, 20g protein, 36g carbs, 8g fat, 10g fiber
