MUSHROOM AND BACON DELIS

Prep/cooking time: 20 minutes

Serving yield: 1-2.

INGREDIENTS

4 slices of pastured pork bacon.

2 cups of halved mushrooms.

1/2 teaspoons of salt to taste.

2 sprigs of thyme.

1 tablespoon of garlic confit.

INSTRUCTIONS

Place a non-stick skillet over medium heat then use a sharp knife to slice the bacon and mushrooms into smaller pieces. Once the skillet is not, add in the bacon and cook for a few minutes until it becomes crispy. Move the bacon to one side of the skillet, add in the mushrooms then sauté for a few minutes until it becomes brown in color and starts to soften. Don’t forget to stir.

Next, add in the salt, thyme, and garlic and cook for about five minutes with a constant stir. Once cooked and when the mushrooms become golden in color, remove from the heat then serve.
