INGREDIENTS

1 pound broccoli, chopped

1 small white sweet potato (about ½ pound), peeled and chopped

½ cup full fat coconut milk

Fine sea salt

Finely chopped fresh parsley, for garnish

*Special equipment needed: blender or food processor

INSTRUCTIONS

1.Steam broccoli and sweet potatoes until tender, about 15 minutes. Allow to cool for a few minutes.

2.Combine vegetables and coconut milk in a blender or food processor. Mix on low speed until creamy. You may have to do this in two batches.

3.Season to taste with salt.

4.Transfer to a serving dish. Garnish with fresh parsley.
