Quince butter

You may be fortunate to have a quince tree in your garden, but if not, quinces can be found in ethnic food stores and some large supermarkets in the autumn. This preserve is delicious with cheese and crackers or bread and butter, or as an accompaniment to roast pork. Wash the quinces and scrub off the grey down before you start.

1 kg (2 lb 3 oz) quinces, peeled and cored weight

450 ml (16 fl oz) water

450 g (1 lb) caster sugar to every 450 g (1 lb) fruit pulp

3 Tbsp lemon juice to every 450 g (1 lb) fruit pulp

Knob of unsalted butter
