Beth’s Prep Tips
Throughout the 21-day program, I provide “Beth’s Prep Tips” to help prepare you for upcoming days or provide a suggestion so that the diet is as easy to follow as possible. I recommend you start the diet plan on a Monday and make some recipes for each week on the preceding Sunday. Each day also includes suggested times of eating to keep the program easy to follow. Alongside individual recipes and days, I indicate if the yield will produce more than one portion to use at a later time during the 21 days or if you need to prepare a meal for the next day, such as Chia Yogurt, which has to be prepared the night before eating.
Although it can be more work upfront, it is best to prepare and freeze the following items in advance. You can follow along with the “Beth’s Prep Tips” within each day so that you are aware of what food and portion size are upcoming to defrost in time:
Kale Pesto Sauce; freeze in an ice-cube tray as 12 (2-tbsp.) servings
Gal’s Black Bean Burgers
Chicken Burgers
Oat Apple Muffins
Lentil Soup
Butternut Squash Soup
Zucchini (Vegetable) Soup
Almond Date Balls
Quinoa Crust
Almond Butter Muffins
Freeze cherries and grapes for optional after-dinner snacks
