Directions:

1.Over moderate heat, heat a sauté pan.

2.Once the pan is sufficiently hot, add the butter and melt.

3.Next, add the shallots and sauté, while occasionally stirring for 2 minutes.

4.Increase the temperature to high and add the pepper medley along with the Cognac or bandy.

5.Simmer the alcohol for 60 seconds before pouring in the beef broth and bringing to boil.

6.Cook until the mixture reduces to approximately ⅓ cup, for approximately 5 minutes.

7.In the meantime, in a bowl, whisk the milk into the cornstarch.

8.Whisk the cornstarch into the sauce and cook while continually whisking for 2 minutes, until thickened.

9.Taste, season and serve.
