49 Baked whole pear with cinnamon and grappa

4 Ripe Comice pears

2 Cinnamon sticks, broken in half

200ml Grappa

100g Unsalted butter, softened

2 tbs Soft brown sugar

2 Vanilla pods, split lengthways

Crème fraîche, to serve

Preheat the oven to 150°C/Gas Mark 2.

Cut a small slice from the bottom of each pear so that they will stand in the dish. Butter a baking dish large enough to hold the pears. Rub some butter over each pear, place in the dish and sprinkle over the sugar, vanilla and cinnamon sticks. Cover the dish with foil.

Bake in the preheated oven for 20 minutes, then remove the foil and add the grappa. Return to the oven and bake for a further 20 minutes or until the pears are very tender.

Serve warm, with the juices and some crème fraîche.
