Rawdical Raisin Cacao Cookies with Oats

Do you miss oatmeal raisin cookies? These are for you. They’re made with an oat and maca base, which creates a hearty, caramel-type foundation, sweetened with whatever you like and made complete with cacao nibs and raisins. You can dehydrate them, if you desire, to get the real cookie texture and make them warm! Otherwise, eat them right away for a nutritious, sweet love bite. Yes, a love bite is a thing.

> Makes: 7 very large cookies

¾ cup (68 g) oats

3 tablespoons (60 g) preferred liquid sweetener

3 tablespoons (45 ml) melted coconut oil

2 tablespoons (15 g) maca powder

2 tablespoons (15 g) cacao nibs

¼ cup (35 g) raisins

Process the oats into flour in your food processor. Add the sweetener, coconut oil and maca and pulse until it all sticks together. Mix in the cacao nibs and raisins by hand, then squish into balls, or use an ice-cream scoop. Let them set in the fridge for 3 hours, eat them right away, or dehydrate for 4 to 5 hours so they hold together and get warm.
