Caprina

Launched in 2001, this pizza takes its name from the Italian word ‘capra’, which means goat. The key ingredient is the scrumptious, crumbled goat’s cheese, topped with sweet and tangy sunblush or roasted tomatoes, making a simple but delicious flavour combination that delights all lovers of goat’s cheese.

MAKES 2 CLASSIC PIZZAS

1 quantity of pizza dough (see here–here)

olive oil, for greasing

flour, for dusting

160g passata

2 slices (90g) goat’s cheese, crumbled

70g block mozzarella, diced

2 pinches dried oregano

freshly ground black pepper

To finish

24 sunblush or roasted tomatoes from a jar

1. While your dough is rising, preheat your oven to 230°C/Fan 210°C/Gas 8. Lightly oil a couple of non-stick baking trays.

2. Dust your work surface with flour. Press and push each piece of dough into a circle about 24cm in diameter. (For more info on working with your dough, see here–here.) Place your pizza bases on the baking trays.

3. Using a tablespoon, spread a thin layer of passata over the pizza bases, taking it almost to the edges. Scatter the crumbled goat’s cheese on top, then add the mozzarella, spreading both cheeses evenly over the pizzas. Season with oregano and black pepper.

4. Place the pizzas in the preheated oven and bake for 8–10 minutes. Arrange the tomatoes on top, then serve.

ROMANA PIZZA

For 2 Romanas you’ll need 130g mozzarella. The other ingredients stay the same.
