Stop by for Supper Friday Night

Most of the actual judging at a cook-off takes place on a Saturday, but teams start arriving a few days in advance. Most of these cook-offs have different activities going on so they can draw a crowd. At our cook-off in Murphysboro, for example, we have a fish fry on Thursday night and a barbecue buffet and street dance on Friday night.

Friday night is also the traditional visiting night for the teams. Once you get set up, it’s time to walk around and see who’s there. Cook some food and ice down some beer or mix up some beverages to share that evening.

We always enjoyed cooking something a little different for the Friday night party. Every now and then, we’d try something exotic like rabbit or pheasant. But mostly we had things like smoked prime rib, tenderloin, or chicken.

Cole slaw, baked beans, and potato salad were always on the Friday night menu in the Apple City tent. Various team members and friends would make their favorite foods, too. The main criteria for these dishes were: They had to be easy, hearty, able to cook or reheat on the pit, and they had to feed a crowd.
