BOHÉMIENNE EN CHARLOTTE

This is my adaptation of a French recipe which is normally made with eggs and cream. This version is lighter and will keep its shape in spite of the omission of setting ingredients.

Make this charlotte in summer, when the vegetables are at their best. I like to serve it sometimes with a sauce made of beaten yogurt, shredded fresh mint leaves, salt and pepper.

If the charlotte is to be kept in the refrigerator for more than a day, it is advisable to use an ovenproof glass dish, or to line the mould with foil. If you only decide after cooking to keep it longer than a day, let the charlotte get quite cold and then turn it out onto a plate, carefully wrap in cling-film and put back in the metal mould.
