DAY 1

Day 1 Breakfast: Egg and Pork Scramble with Spinach and Mushrooms

Combining pork with seasonings makes a delicious homemade sausage blend.

4 oz. ground pork

½ tsp. dried ground sage

¼ tsp. crushed red pepper

1 pinch ground cloves

1 tbsp. coconut oil

¼ cup sliced fresh mushrooms

½ cup fresh baby spinach, chopped

2 eggs

Combine the pork with the sage, pepper and cloves. Heat the oil in a medium skillet over medium heat. Add the pork and cook until lightly browned and just cooked through, about 2–3 minutes. Add the mushrooms and cook for 2–3 minutes longer, until tender. Add the spinach and cook until just wilted. Whisk the eggs together, add to the skillet and lower the heat.

Cook, stirring often, until eggs are thickened but still glossy. Serve warm.
