Basil Roast Chicken

Chicken is the most versatile meat from all the available ones and this recipe adds the amazing flavor of basil to this common meat, creating a delicious, juicy dish for your lunches or dinners.

Prep time: 15 minutes

Cook time: 50 minutes

Servings: 4

Ingredients:

4 chicken breasts

1/2 cup basil leaves

1/2 cup almond meal

1/2 teaspoon dried oregano

Salt, pepper

4 tablespoons olive oil

juice from 1/2 lemon

Directions:

Take each chicken breast and make a hole in it, lengthwise. Set aside.

Place the almond meal, oregano and basil in a food processor. Pulse until ground. Spoon this mixture equally into the hole you made in all four chicken breasts. Arrange the meat in a baking tray and drizzle it with the olive oil and lemon juice. Bake in the preheated oven at 350F for 40-50 minutes until fragrant and golden brown and the juices run out clear. Serve it warm with your favorite side dish.
