Makes 4 sandwiches

FRIED TOMATOES

COCONUT OIL, FOR FRYING

1½ CUPS CORNMEAL

1 TEASPOON PAPRIKA

½ TEASPOON CAYENNE PEPPER

1 TEASPOON SALT, PLUS MORE FOR SPRINKLING

½ TEASPOON FRESHLY GROUND BLACK PEPPER

1 CUP ALL-PURPOSE FLOUR

3 EGGS

2 GREEN TOMATOES, CUT INTO ¼-INCH-THICK SLICES

GARLIC MAYO

2 TABLESPOONS MINCED GARLIC

½ CUP MAYONNAISE

1 TABLESPOON LEMON JUICE

SALT AND FRESHLY GROUND BLACK PEPPER

SANDWICHES

8 SLICES MULTIGRAIN BREAD, TOASTED

12 SLICES BACON, COOKED

ICEBERG LETTUCE
