The first time I called Allan Benton to order his bacon for Momofuku, I asked him to send me some written information about his products. I figured I’d get a press release. Instead, I got a scroll of butcher’s paper, filled with Allan’s handwritten account of his story—how he started doing what he does, and a description of how he makes his hams and bacon. It will pain me until death that I lost that scroll during the early crazy Noodle Bar days, but in its spirit, here’s Allan’s story in his own words. Knowing it and getting to know him—which isn’t that hard, since he’s usually the guy taking the phone orders—has deepened our already profound love of and profane reverence for his smoked meats.
